JR made some delicious bruschetta and I canned the rest whole. From the tomatillos I made a batch of salsa verde. The salsa verde came out a little too tart, the canning recipe called for a whole cup of vinegar or lime juice. So I'm going to use it as a chicken or fish marinade. In the future I will use less acid and eat it fresh or freeze the tomatillos. I also dried some of the Principle Borghese tomatoes.
Last night we finally got some rain. Hopefully it made the ground at the plots softer so I can finally pull up the remaining weeds and create the 4th bed.

Deletelovely! My canners aren't really in full swing yet, maybe next month. I agree with you on the tomatillo being too tart from most recipes; might try adding a spoonful of sugar when you open the jars.

DeleteI am also swimming in tomatillos. I freeze mine and then make batches of tomatillo salsa when I want some.

DeleteThat's a load of tomatoes!! It will be a month or more before we have that many. We got plenty of rain this week too, sure has been nice.
ReplyDeleteI'm curious to see how many total fruit I get from 17 plants. I did plant a little early and the weather has been warm so the harvest is earlier than it usually would be.
